The ingredients needed to make Instant Nylon Khaman:
- Prepare For khamman batter:-
- Prepare 1 cup flour (besan)
- Prepare 3/4 tbsp Citric Acid
- Make ready 3/4 cup Water Or as needed
- Prepare To tsste Salt (as per taste)
- Get 1 sachet Regular Eno
- Take For Tadka:-
- Make ready 2 tbsp Oil
- Get 1 tsp Mastard seeds (small)
- Get 8-9 Curry leaves
- Get 1 pinch Asafoetida
- Take 4-5 Green chilles
- Get 1/2 cup (125 grams)- Water
- Make ready 1/4 cup (60 grams) Sugar
- Take to taste Salt
Instructions to make Instant Nylon Khaman:
- First of all, using very little oil grease a thali. (Make sure that your thali has a height of 1 & half or 2 inch) Place a steamer on a gas and pour a glass of water and bring it to a boil. Meanwhile prepare a khaman batter.
- Take a bowl and mix all the dry ingredients. (Besan, salt, citric acid) Now by adding little little water make a lump free batter.
- Cut and add 1 sachet of regular eno on a batter and sprinkle 3-4 drops of water on it. Once it bubbles up immediately stir the batter. (Batter must be in a flowing consistency same as cake batter)
- Without wasting a single minute, immediately pour the batter into a prepared thali, place it in the steamer and steam for around 12-15 mins on a medium heat.
- While khaman is steaming, let's make a tadka. For tadka take another pan and heat the oil on a medium heat
- Once the oil is hot, add mustard seeds and let them pop. Then add asafoetida, curry leaves, green chilles and fry it for a minute.
- Now add water, sugar and salt. And give it a nice boil for around 4-5 mins or till the sugar melts completely. Once it's done, turn off the gas and let's the tadka cool completely.
- Now using a knife or a toothpick, check the khaman. If it comes out clean then it is ready. Remove the thali from the steamer and place it aside so that it cools completely.
- After 5-6 minutes take a sharp knife and apply some oil on it. Using that knife cut the khaman into the square shape.
- Now using a spoon, pour the tadka evenly on all the sides of the prepared thali and let it rest for another 5-6 mins so that the khaman absorb all the water and flavors of tadka into it.
- Finally garnish it with some chopped coriander leaves and desiccated coconut.
- Remove the pieces in a serving plate and enjoy your super-soft, spongy, fluffy, mouthwatering nylon khaman with coriander chutney and gujarati khadi chutney. 😋😋😋😋
