Instructions to make Gujarati special Nylon Khaman Dhokla:
  1. Take a mixture jar add besan, salt, sugar, assafoetida,turmeric, citric acid and grind it till sugar and other ingredients mix well fine and take out in mixing bowl.
  2. Now add corn flour and mix all dry ingredients. Now gradually add water and mix well in one direction for 5 min. Add oil and mix well and kept it aside for 15 min.
  3. After 15 min mix well mixture for another 5 min. Now add steamer on stove for boiling water at high flame. Till then add baking soda and Baking powder and 2 tbspn water and mix well it double it's size.
  4. Grease Dhokla mould with oil and pour mixture in it and steam for 15-20 min. After that check once. If it cooked well turn off flame and take it out and rest till it comes to the normal temperature.
  5. For tadka heat oil in pan add mustard seeds assafoetida, dry chilli, curry leaves. After add water to it. Add sugar to it and let it boil.turn off flame. Make a peace of khaman and pour pour tadka to it and spread well.
  6. Garnish with coriander leaves. Serve with tamerind jeggary chutney.
